Miso-Glazed Salmon
Wasabi mashed potatoes
Steamed bok choy

Once again my barometer was Laura, who doesn't really care for salmon. She asked for seconds.

How do you make your Wasabi mashed potatoes?
It seems really simple to me, but I have been so afraid of putting too much wasabi in that I haven't made them. Your dinner sounds wonderful.

Wasabi mashed potatoes!
Place 2 pounds cubed red potato in a large saucepan, cover with water. Bring to a boil, cook 15 minutes or until tender. Drain. Place potato, 1/4 cup fat-free, less-sodium chicken broth, 1/4 cup reduced-fat sour cream, 2 tablespoons butter, 1 teaspoon wasabi paste, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Mash to desired consistency.

I made the Wasabi Potatoes and Miso Glazed Salmon tonight -- both were an absolute smash hit. So yummy, such good flavor, and so quick. I think these are going into heavy rotation around here.
