Anyone have a favorite cheesecake recipe? I'm making a stack of them as birthday cakes for a friend this weekend. I'm not particularly fond of cheesecake myself, so if someone has a killer recipe, share, share! My current one is a pretty basic one, full of vanilla beans, from Food & Wine - i made a bunch during the holidays of 2001.

I have an amazingly simple yet very much a crowd pleaser! It's from Cooking with Kids and its a no bake, refridgerated version but pretty darn good (made with lots of fresh berries (but could be substitued with frozen).

I'll get the receipe tomorrow if you're interested...

The husband is in possession of the best TOFU cheesecake recipe I have ever tasted. It's excellent for pleasing any crowd - great for cheesecake lovers AND vegans alike.

(Of course, I can't really remember what non-tofu cheesecake tastes like at this point, but his version is identical to what I remember great cheesecake tasting like!) Let me know if you want the recipe, and I can post it...

Yes, yes! i want them both! Even if i don't use them precisely, i often take elements of recipes and combine them around - so more is better!

i will post an amazing brownie cheesecake tonight if I can remember. My aunt made it a few weeks ago at the bridal shower... and it was fantastic. almost couldn't cut through it, it was so right. not very cheese cake like.

Thanks for the hints! I wound up doing two cheesecakes: the traditional vanilla-with-sour-cream-topping cheesecake from Food & Wine, and a a lovely goat cheese, mascarone & cream cheese one with pistachio nut brittle for the topping from Claudia Flemings "The Last Course". The birthday girl appeard to like them very much, as did her guests. 8)
