The Bellini
white peach puree, chilled
dash of peach brandy
Prosecco (or champagne)
Mix the peach puree and brandy in a champagne flute. Add Prosecco
or Champagne. You should have about 3 parts Prosecco to 1 part
peach puree.
One nice thing about this cocktail is that it's easy to mix with
mineral water for a non-alcoholic version.
