Dried-fruit Coffee Cake
This is Russell’s favorite.

 

0.25 lb. butter (1/2cup, 1 stick)
3/4 cup brown sugar
zest and juice of an orange
2 eggs
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
2.25 cups flour
0.75 cup milk
some dried fruit (dried cherries, cranberries, blueberries, apricots ­ or any mixture of the above)

for the streusel:
0.25 cup sugar brown sugar
0.5 cup flour
1/2 tsp. cinnamon
4 tbsp. cold butter
some nuts, if you feel like it (I use almonds sometimes)

 

*preheat the oven to 350F. Butter and flour a 9x9 or 7x11" cake pan.

*Cream the butter with the orange zest and sugar until fluffy. Add the eggs, one at a time, and beat until smooth. Stir in the juice and salt, baking powder, and soda. Alternately add the flour and milk, in thirds, beating just until smooth. Fold in the dried fruits. Pour into the pan.

*Make the streusel: mix all ingredients in a food processor or in a bowl with your fingers until it’s crumbly.

*Press some of the streusel lightly into the top of the coffee cake. Bake until the top is lightly browned, firm to the touch, and a skewer or knife comes out clean (about 45 minutes)
