LECHTER KARTOFFELSALAT
German potato salad. Wholly unlike what you think of as a potato salad.

 

~2 lbs. potatoes
1 cup chopped onion (white or yellow)
2/3 cup stock (chicken or veggie)
1/3 cup olive oil
2 tbsp. white wine vinegar
2 tbsp. Dusselldorf mustard
Salt & pepper to taste
Juice of 1 or 2 lemons

 

*Boil the potatoes until cooked but not falling apart. Peel and slice them while warm into a bowl. The slices can be irregular and should be about a half-inch thick.

*Combine all other ingredients except for lemon juice, bring to a boil, and simmer for about 5 minutes. Adjust the vinegar to taste. (It should be tart.)

*Add the lemon juice to the mixture, and pour over the potatoes. Chill and serve cold.
