Katie’s Ginger Cake
katie and I seem to share a love for ginger.

 

1.5 c. flour
1 tsp. baking soda
1.4 tsp. salt
1/2 c. packed brown sugar
1/2 c. light molasses
1 egg
1/2 c. minced ginger
1 stick butter
1/2 c. water

 

*Preheat the oven to 350F. Grease and flour a 9x9" pan.

*Mix the flour, baking soda, and salt in a bowl. Reserve

*Mix the sugar, molasses, egg, and ginger.

*Melt the butter together with the water. Add it to the molasses mixture.

*Add the flour mixture to the bowl of butter/water/molasses, and whisk together until smooth. Be sure to pull out any long stringy ginger bits.

*Pour the batter into a pan ­ it will be thin. Bake at 350F for 25-30 minutes, or until done.

*Cool for 10 minutes, remove from pan.
