HALIBUT with PROSCIUTTO

 

*1 half-pound halibut filet per person
*~2 slices of proscuitto per filet
*olive oil
*salt & pepper to taste
*optional: pumpkinseed oil.

 

*Preheat your oven to 375F.
*rub a cooking sheet or foil with the olive oil.
*Place each piece of fish on the foil or sheet. Wrap the fish around the edges (but not on the top or bottom) with proscuitto. Fold the proscuitto so it is only as tall as the filet.
*Rub the top of each filet with olive oil or pumpkinseed oil; sprinkle with salt and freshly ground pepper.
*Bake until just flaking (10-15 minutes). Transfer to broiler for 30 seconds at the end to brown the tops and crisp the proscuitto.

*You can use just about any kind of firm white fish for this - i’ve used sea bass before, as well. Just a few nights ago i was served scallops prepared this way, which were VERY good.
