Muffins!
We make these on weekends with both fresh and dried fruit.



2.5 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2-3/4 cup. packed brown sugar
2 eggs, lightly beaten
1 1/3 cups milk or buttermilk
1/3 cup melted butter
1.5 tsp. vanilla
1c. fresh fruit, tossed with flour.
OR
1 c. dried fruit, added to the wet ingredients.


--Preheat oven to 375 F.
--Butter or oil muffin tins.
--Add dry ingredients to one bowl, and mix the wet ingredients in another.
--Add the wet ingredients to the dry, combine with a few swift strokes. (Don’t beat the mix, and don’t worry about unevenness.)
--Fill muffin tins, bake for 25 minutes.
--Let muffins cool for 5-10 minutes before you turn them out, or they’ll fall apart!
