Potato Rolls, or ‘refrigerator roll dough’
we always have these at Blink family holidays

 

1 package active dry yeast
1.5 c. warm water (105-115 degrees)
1 c. unseasoned lukewarm mashed potatoes
2/3 c. shortening or butter
2/3 c. sugar
2 eggs
1.5 tsp. salt
6 to 7 cups all-purpose flour

 

Dissolve the yeast in the warm water in a large bowl. Stir in the potatoes, sugar, shortening/butter, eggs, salt, and 3 cups of the flour. Beat until smooth.

Mix in enough of the rest of the flour to make the dough easy to handle. Let it rise in a warm place.

Make your rolls ­ crescent shaped, trident shaped (in muffin tins) or just balls in a cake pan. Bake them at 400 degrees until golden brown, 15-20 minutes.
