SALMON BAKED WITH ANCHOVY BUTTER

 

6 salt-packed anchovy filets
8 tbsp unsalted butter
Juice of 1/2 a lemon
1-1.5 tsp freshly ground black pepper
2 lbs fresh salmon filet

 

Anchovy Butter
Bone and rinse the 6 anchovy fillets and dry them well. [note: you can use anchovy paste, too - about 1 tbsp of paste per anchovy measure] Pound the anchovies to a smooth paste in a mortar. Mix the paste by hand with 8 tbsp butter cut into bits and softened to room temperature. Work in the juice of half a lemon and the freshly ground black pepper.

Salmon

Cut 2 pounds of salmon fllet into six pieces, each about a half an inch wide. Put the salmon on a lightly oiled baking sheet and spread each piece with about 1.5 tbsp of anchovy butter. Bake in a preheated 400-degree oven for 4-5 minutesuntil the salmon is just cooked. The salmon is done when it feels springy yet firm when pressed with a finger.
