Tzatziki!

 

1 cup cream cheese
1 cup plain yogurt
4 cloves of garlic, smashed
pinch of salt
1/4 cup olive oil
1 peeled & diced cucumber

 

Combine all the ingredients except the cucumbers in a bowl and stir until creamy. Add cucumbers and refrigerate. Serve with bread, fried zucchini, or just about anything.

Notes from anne: all the ingredients can be blended in a blender on low as well. For a lower fat version use low fat cream cheese, non fat yogurt and 1/8 cup olive oil. (Don't use fat free cream cheese or leave out the olive oil - its yukky that way, i tried!) For that flaming hot garlic taste use 6 or more cloves of garlic. Yum!
